Santoku knives
A beautiful name for a beautiful knife. The Santoku knife is the Japanese knife equivalent of the Western chef's knife. Santoku means roughly translates as three tasks and can be used for meat and fish as well as vegetables - an all-round knife in other words. It has a characteristic shape with a straight back that slopes rather steeply towards the tip. Like the chef's knife, it usually has a rather curved edge. The blade length is usually between 15 and 24 cm.
