With Karimatto comes a simple and affordable series of knives that do the job without flashing too much. The steel is a combination of molybdenum and vanadium called 5Cr15Mov and has an HRC of 56. The handles are comfortable to hold and made from a durable composite material.
Santoku is a chef's knife in the traditional Japanese style. The olive grind allows you to avoid the vacuum that causes potato slices to stick to the blade.
