Japanese chef's knife, often called a santoku knife, from Miyabi's 7000D series. The blade is made according to the Damascus method with a hard CMV 60 steel in the core surrounded by 32 layers of softer steel on each side and has been sharpened at a really steep angle with the Honbazuke method.
The handle is classic d-shaped and is made of mikarta and stainless steel.
