From Valencia in eastern Spain comes the paella, this unofficial national dish that has its roots in the eighth century. Now, you don't necessarily need a paella pan to make paella, but for a family of four you will need a pan of at least 40 cm - and in that size and upwards you'll mostly find paella pans. Apart from being large, the paella pan is also characterized by a low edge and several handles.
