The santoku is a Japanese knife style with a wider, slightly curved blade and a softer profile towards the tip than a chef's knife. It suits a different cutting technique, and many people find it a more natural choice for vegetables and fish.
The MC63 powder steel core is ice-hardened with the CRYODUR process to 63 HRC and hand-finished using the three-step Honbazuke technique to an angle of 9.5 to 12 degrees per side.
