The santoku is a Japanese knife style with a wider, more rectangular blade and a softer curve towards the tip than a chef's knife. It suits a different cutting technique, and many people find it a more natural choice for vegetables and fish.
The hollow-edge blade has oval dimples along the side that create air pockets between blade and food, reducing friction and stopping thin slices from sticking. Zwilling's Pro series is forged from a single piece of steel in Germany and FRIODUR ice-hardened to 55–58 HRC. The curved bolster, the series' signature, lets the whole edge right down to the tip meet the cutting board. Blade length 18 cm. POM handle with three rivets. Hand washing recommended.
