Tamping is part of the espresso culture where many have their own methods and opinions on what is best. How hard to tamp and to what extent the coffee should be leveled are two essential questions. Certainly there are better and worse ways to do it, but if you follow a few basic rules you will go a long way. The most important thing is to be consistent with the way you tamp, because the coffee in the cup can differ greatly otherwise. With consistent tamping, you've nailed down a variable and can adjust your brew accordingly.
