Pour over

Pour over is the umbrella term for all brewing methods where you pour hot water over ground coffee in a more or less subtle way. We at KitchenLab like this type of coffee because you can experiment with brewing times, grinding degrees, water temperatures, stirring and a host of other variables. Pour over coffee is generally brewed in paper filters and the method often brings out more complexity and results in a lighter cup of coffee than other methods. The three most popular pour over models are Hario V60, Kalitta Wave and Chemex. The Chemex paper filter is much coarser than the others, which means that the filter itself retains more of the coffee's oils. The taste from a Chemex is therefore often a bit cleaner and lighter. With V60 you get a nice acidity and floweriness, while with Waven's three small holes you generally get a longer brewing time and a sweeter coffee. If you're interested, we really highly recommend investing in a good scale and a gooseneck jug - it will make brewing both better and more enjoyable. With a good scale, you can dose the same amount of coffee and water each time you brew (or as you brew, adjust the amount until it tastes great) so your cups are consistently the same. With a gooseneck jug, you have better control over the pouring so that you can more easily dose the water correctly, follow brewing recipes and achieve even brewing of all the ground coffee in the filter. With the right equipment, you get a better handle on the variables that affect the end result.
