The saute pan is essentially a frying pan with higher edges and often fitted with a lid, which means that in addition to being used in the same way as a frying pan, it is also an excellent vessel for sauces and stews. Which saute pan you should choose depends on how it will be used. Almost all of ours have a thick bottom, which is good because it retains the heat in the pan even when food is placed in it - if the pan gets cold, the food risks being cooked rather than fried.
