Most of us can probably relate to Swedish home cooking, but how many people can actually make a really good boiled veal with dill, perfect sandwich cake or gravlax that melts in your mouth? Classics that are guaranteed to make both guests and taste buds cheer.
Throughout his career as a chef, Stefan Ekengren has been passionate about Swedish home cooking. Almost 10 years ago, he collected some 60 of his best recipes in the book Husman, which is now published in a revised edition with a new format and 8 new recipes. Here you will find favorites such as cabbage dumplings, fried herring, pork with onion sauce, toast Pelle Janzon and homemade cheesecake, but also forgotten dishes such as pölsa and paltbread with pork that deserve a little more attention.
All recipes are given for both 4 and 10 people. Stefan also gives cooking tips for how to succeed best and suggestions on how to raise the dishes a notch and take them further in a slightly more untraditional way. For example, try smoking the cabbage in a smoke box before assembling the cabbage pudding, serving the veal with grandmother-cooked carrots forked with butter or cooking the nettle soup with other weed varieties than just nettles.
Stefan Ekengren has been chef at the acclaimed Restaurant Hantverket in Stockholm since 2017. He also writes columns, is often seen as a TV chef and can be heard on various podcasts. In addition to Husman, he has written Högtid and Potatis, which have also become modern cookbook classics. With his genuine knowledge, Stefan wants to inspire people to cook and serve home cooking more often.
