Niklas Ekstedt writes down the Swedish kitchen for an international audience, which is considerably harder than it sounds since half the job consists of even determining what's Swedish and what's just old. Smoke, fire, acid and pickling, with a systematic approach Swedish cookbooks rarely bother with. The fact that it's written in English makes it, frankly, more useful for us than for its intended readers, since you see your own kitchen more clearly when someone else is forced to explain it.
