    • Apollo is the first cookbook about Frederik Bille Brahe's restaurant Apollo, located in the courtyard of the historic art institution Kunsthal Charlottenborg in Copenhagen. Together with head chef Yuta Kurahashi, he shares 104 recipes in Apollo's distinctive style: playful and elegant, with Danish cuisine in dialogue with Japanese, French and Italian influences. The photographs are taken by Nikolaj Møller and the book is edited by Jeni Porter.

      Beyond the recipes, the book documents how a group of friends with complementary talents came together to shape the restaurant's spaces, textures, artworks and atmosphere. It is a book about food as a meeting between friends, music, art, design and wine, and about how a restaurant can become something more than a place to eat. Frederik Bille Brahe trained in fine dining and worked in London and Paris before returning to Copenhagen, where he opened Atelier September in 2013 and later Apollo.
