Osteria 16 on Gothersgade in Copenhagen has since opening become one of the Danes' most beloved addresses for Italian food: simple, well-cooked and focused on the ingredient rather than the technique. This is the first cookbook from the restaurant, with 80 recipes by Morten Kaltoft and Emil Alsbo covering the full meal from antipasti and bread to pasta, risotto, polenta, pizza and dessert.
The philosophy is the same as at the restaurant: few ingredients of the right quality, treated with respect. No unnecessary steps, no padding. The recipes are written to work in an ordinary kitchen without specialist equipment, but they assume you are willing to seek out good produce. It is a cookbook for those who already know that it does not need to be complicated to be good, and who want recipes that confirm that conviction with Italian clarity.
