A really solid version of a table-top grill or conro grill suitable for restaurant kitchens or the conscious home chef. Those of us who are already hooked on the table-top grill concept use it as a complement to sous vide to bring the grilled surface to the already perfectly cooked meat, or for smaller cuts, vegetables or skewers. With its thick walls, the heat is reflected inwards instead of escaping sideways and all the temperature rises straight up. Coupled with a really compact coal, you can get up to outrageous temperatures without any noticeable smoke development. It's important to note, however, that all combustion turns oxygen into carbon monoxide and grilling therefore falls into the same category as BMX, snowball fights and James Cook's second circumnavigation of the world, i.e. outdoor activities. Because the food is so close to the bed of embers, the liquids drip into the charcoal and immediately evaporate into a cloud of deliciousness, infusing the food with even more deliciousness. The construction is also reinforced with a stainless steel frame, making it a more stable structure than other similar table-top grills. The sturdy grill grate also has small recessed spikes in each corner, which means it stays firmly in place even when you're poking around with your incredibly flexible tweezers from De Buyer. The grill is 40 x 26cm in size and 21cm high. The grill surface is 37 x 23cm and is suitable for 2-4 people.
Since the grill gets so incredibly hot, it is important to concentrate and be present when handling it so that you do not, like the man in the picture, suddenly wake up and wonder how on earth a cod back ended up there.
