Three centimetres doesn't sound like much, but anyone who has made ravioli on a standard pasta machine knows how much it matters. Atlas 180 is Marcato's classic pasta machine in a wider format, with 18 cm rollers instead of the usual 15. That means wider sheets, more ravioli per sheet, lasagne sheets that more often cover the whole dish and a little less stress when feeding in the dough.
The dial on the side lets you choose between ten settings, from 4.8 mm for working the dough to 0.6 mm for a thin, almost translucent sheet. The rollers are made of anodised aluminium and the body of chrome-plated steel, just like the Atlas that has stood in Italian kitchens for generations. The included cutting attachment makes 6 mm fettuccine and 1.5 mm tagliolini.
The machine is cranked by hand, but has a bayonet fitting where you can attach Marcato's Pastadrive motor, sold separately. Combs and scrapers can be removed when the machine needs cleaning. Wipe with a dry cloth and use a wooden toothpick to remove dough residue. The machine must not be washed or rinsed with water.
Includes crank, table clamp and cutting attachment for fettuccine and tagliolini. Dimensions 23 x 20 x 16 cm. Made in Italy.
