    • Not far from our store in Malmö is a restaurant that has attracted a lot of international attention over the years: Noma opened in 2003 and over the years has been named the world's best restaurant, collected Michelin stars, become a burger bar, closed down in 2016, reopened in 2018, and run pop-ups around the world. There are few artists who manage to stay fresh and relevant year after year, but Noma was named the world's best restaurant by World's 50 Best in 2021 and received its third Michelin star in the same year. In this book, René Redzepi and the team give a picture of what Noma 2.0 means, that is, the Noma that came into being with the reopening in 2018. The book aims to give as accurate a picture of what the restaurant does as possible, which it does best with great pictures and descriptions of the dishes rather than recipes. Each dish is described and the ingredients are listed, but no quantities as the ingredients are live and seasonal. René Redzepi, the restaurant's founder and mastermind, along with two of his trusted servants, has collected and displayed a variety of dishes that can both inspire and fascinate. Mette Søberg has been developing dishes for Noma for over ten years, and with the reopening in 2018 she became Head of Research. Junichi Takahashi has also been part of Noma's team for over ten years and has been involved in developing many of the iconic dishes that are well known around the world.
