The book is based on his BBC series of the same name, in which he took seven dishes from everyday British life and devoted an entire episode to each one. Fish and chips, pizza, roast chicken, spaghetti bolognese and a few others.
The method is always the same. He travels to wherever the dish comes from, eats the best versions he can find, takes them apart into their component parts and builds his own version using measuring instruments and a persistence that borders on the unhealthy. To be perfectly honest, that is putting it kindly, of course it is completely insane!
Quite a lot of it is actually useful. He puts star anise in his bolognese because compounds in it enhance the flavour of the meat. He makes an ordinary domestic oven behave like a wood-fired oven by baking the pizza on an upside-down baking tray beneath the grill. The potatoes for fish and chips are boiled, dried and fried in several stages.
The effort is obviously out of all proportion to the objective, and that is the entire point of the book.
If The Fat Duck Cookbook is the monument, this is the book of his you can actually cook from, provided you have plenty of time and nothing better to do.
