Alex Atala runs D.O.M. in São Paulo, which for several years ranked in the top ten of the world's best restaurants, and has done more than anyone else to bring Amazonian ingredients into fine dining. The book features the restaurant's finest dishes but is at least as much about his food philosophy and the deliberately local thinking behind it. Most of what he cooks with comes from areas that don't have a name on most maps. It's one of the rare chef monographs where the ingredient list itself is the news.
