With a good scale, you can dose the same amount of coffee and water each time you brew (or as you brew, adjust the amount until it tastes great) so your cups are consistently the same. With a gooseneck jug, you have better control over the pouring so that you can more easily dose the water correctly, follow brewing recipes and achieve even brewing of all the ground coffee in the filter. With the right equipment, you get a better handle on the variables that affect the end result.
