Judy Rodgers ran Zuni Café in San Francisco and wrote a book that holds bible status among professional chefs in the US. Above all for the roast chicken with bread salad. The text is reflective and unusually thorough about why you do what you do, in other words written for someone who wants to understand rather than just follow instructions. The book was inducted into the James Beard Cookbook Hall of Fame in 2022. Rodgers died in 2013. The cover might look like something you'd find at a flea market and quickly flip past, but its influence on generations of international chefs is harder to joke away. This is a book that needs to be on the shelf.
