Aaron Ayscough methodically works through history, production and producers in a book that lands somewhere between reference work and reportage, whereas the rest of natural wine literature can feel like it consists of manifestos and in-jokes in roughly equal measure. This one would hold up even if the competition were considerably tougher than it is.
