Jean-Christian Jury is a chef from Toulouse who opened La Mano Verde in Berlin in 2008, his first entirely vegan restaurant, which was named Europe's best vegan restaurant throughout all eight years it was in operation. His major work is Vegan: The Cookbook from 2017, with nearly 500 recipes drawn from cuisines around the world.
