Sandor Katz didn't write a recipe collection but a breakdown of fermentation's principles, which is exactly why this book is still the one everyone points to. Vegetables, milk, grains, beans and meat, with proper reasoning about what's actually happening in the vessel and why the traditions look the way they do. Michael Pollan wrote the foreword. There are prettier books on the subject and there's none that replaces this one.
