    • Powdered tapioca jam or tapioca paste. A natural product made from cassava species. It is low in sodium and contains iron and calcium. It is also used as a thickener in pies, sauces and soups and gives a glossy finish. It is used as a binder in gluten-free recipes and can be mixed with other flours to make gluten-free pastries, breads and cakes.

      Use: If you use tapioca starch to replace cornstarch, use twice as much tapioca flour as the amount of cornstarch. If you are using as a binder, mix with other flours so that the tapioca starch makes up 30-50% of the mixture depending on the recipe.

      Storage: Store in a dry, cool place away from direct sunlight. Use within 6 months of opening.
