Sure, we may not have cozy, traditional gathering places like British pubs or French bistros, nor do we have a dominant charismatic ideologue who changed our way of thinking overnight and whose sous chefs went on to open their own places - like New York's David Chang or Copenhagen's René Redzepi. Stockholm is also (unfortunately) not a multicultural melting pot where you can eat well-prepared, exciting and cheap food from all over the world, while we hardly have any domestic restaurant culture to lean on either. Historically, authorities and moralists have instead seen eating out as a social problem that needs to be curbed, regulated, stifled - at least when it comes to the working population. Instead, going to a restaurant has mostly been something for the elite, while ordinary, decent people shouldn't run around the city but eat their meatballs at home.
Stockholm, however, is a city in transition. Almost every week a new wine bar, coffee roastery or artisan bakery opens. Stockholmers themselves have stopped seeing eating out as just an excuse to get drunk and have instead started living their lives more and more in bars. The authorities and moralism may still be there, but there is also a counter-movement in the form of a new generation of diners, restaurateurs, chefs, food artisans and bartenders.
Stockholm for Foodies is a book about these people, about their places and about a city whose bar culture is being created right now, before our eyes.
