Sohla El-Waylly explains why techniques work instead of just describing them, and does so across a page count that makes most competitors look thrown together in a hurry. The book won the James Beard Award in 2024 and was named cookbook of the year by the New York Times. The teaching is unusually generous, in other words written by someone who actually wants you to understand rather than just be impressed. It works equally well for someone who's been cooking for twenty years as for someone who just moved out of their parents' house. A very good choice if you only want one cookbook, and an excellent one to keep at home to flip through and check things in every now and then.
