    • Richard Olney was American, settled in Provence, and then wrote the book an entire generation of chefs refer to when talking about French home cooking. The text is reflective rather than instructive, and the recipes are embedded in flowing prose, which was normal then and has become a stylistic device now. Olney also shaped the thinking of the Chez Panisse circle and thereby, indirectly, the entire American ingredient-driven movement. A cult book in the reasonable sense of the word.
