About Silk Gel (E471)
Silk Gel is specially designed to facilitate the production of ice cream and sorbet. As the name suggests, the additive gives a silky texture to what you make. Add a small amount to the recipe you normally use. Silk Gel simply gives a better texture, consistency and also improves the shelf life. It can also be used as a consistency enhancer in sauces and whipping cream.
Use
It works best when added to hot batter, but also works in cold batters - provided it is mixed in a drop of warm water first. Dosage is between 3-5 grams per liter.
