The santoku is the Japanese knife type that has gained a firm foothold in Scandinavian kitchens in recent years, not least because the blade geometry offers something the classic chef's knife does not. The blade is wider and without the pointed tip typical of Western knives, and the edge is flatter in profile. This makes the santoku excellent for the direct cut that produces clean, even slices of vegetables, root vegetables, fish and boneless meat without the knife needing to rock back and forth to work through the ingredient.
Veark's SK15 takes the Japanese blade shape and builds it in the brand's design language: a single piece of German steel forged in Solingen, without separate parts, with the open oval handle that makes the knife immediately recognisable as Veark. In design terms, the SK15 sits naturally next to a CK20 or CK16 on a magnetic bar, bringing together Japanese blade geometry with a northern European design language without the two clashing. A knife for those who want a complement to a chef's knife, or for those who prefer the Japanese blade profile from the start.
Blade length 15 cm. Full steel construction, a heavy and robust knife with an industrial workhorse feel. Stainless steel X50CRMoV15, 58 HRC. Made in Solingen, Germany.
