Ring-shaped fermentation basket in rattan of fine quality from Birkmann. A fermentation basket is your best friend when baking bread that needs to ferment for a long time and has high hydration. When a dough rises in the proofing basket, it retains its shape better - and you get the nice stripes on the bread when it comes out of the oven. Make sure to use a generous amount of flour, preferably a mixture of wheat and corn flour, to prevent the dough from sticking.
