A refractometer measures sugar content by measuring the refraction of light in liquid. A more reliable way compared to, for example, a baume meter that measures density which can be affected by factors other than sugar content. This digital refractometer provides a quick and easy sugar content measurement with high accuracy, helping you to make perfect sorbet bases for a Pacojet, for example, if you are experimenting with strange ingredients but still want a good consistency. A sorbet should have a sugar content of around 20-26% Brix, which means that the same sugar syrup will not give the same results on a lychee as on a cassava. However, there is a difference between sugar and sweetness, which means that you can play around with other sugars that you will find in our range to still keep your sorbet far too tart or bland if you so wish.
Place a small drop on the glass and the result will appear on the clear display within 2 seconds. The meter has automatic temperature compensation. Calibration is easily done in the same way as measurement but instead use demineralised water which you will find among our molecular ingredients.
