About Potassium sorbate (E202)
Potassium sorbate, also known as fermentation inhibitor, is a preservative made to prevent the formation of yeast and mold. It can be added to wine, for example, once you've got the flavor profile you want and stop further fermentation - or to keep food from going moldy. Do not use it when baking bread or otherwise needing the yeast.
Use:
Estimate 0.25 grams of potassium sorbate per kilogram. For fruit drinks or wine, the dosage is based on the amount of alcohol in the drink. If it is around 12% count on 0.07 grams per liter. With lower alcohol content, more is required.
