    • When we made our first attempt at making pizza napoletana in our own oven at Ville nine years ago, we had no idea how far this passion would take us; all the pizzas we've made, all the ovens we've built, all the trips to Naples. Our ambition with this book is that your blood pressure doesn't have to be as high as ours, but we hope to give you all the answers that we've been struggling for. And if two ordinary guys, who could barely even boil potatoes, can do it, so can you.

      Pizza Napoletana gives you the recipes and the 18 pizza recipes you need to eat really good Apolitan pizza. The book consists of an exhaustive technical section with a concrete review of how to get the optimal dough and conditions based on your oven or wood-burning stove. You also get information and facts about what actually happens to the dough, how the heat affects the pizza when you bake it and other underlying factors.

      Ville Ilola and Besmir Balaj have dedicated the last nine years to Neapolitan pizza. In spring 2014, they opened the pizzeria Lilla Napoli in an abandoned parking lot in Falkenberg. Until then, Ville had been working on installing sun protection and Besmir laying tiles. Every day after work, they met to bake pizza, experiment with dough, make their own mozzarella, and go on regular research trips to Naples. Through constructive exercise, they constantly come up with new and better solutions.
