Thirty-five recipes from France's most famous pastry chef, photographed by Sergio Coimbra in a way that makes the book work equally well on a coffee table as in a kitchen. Pierre Hermé works with chocolate the way others work with perfume, that is, in notes and layers rather than quantity. The recipes are demanding but surprisingly clearly written. A coffee-table book that doesn't bother hiding the fact that it's a coffee-table book, which is rather endearing.
