Atlas is Marcato's best-known pasta machine, and it stands in more Italian kitchens than anyone can count. This is the basic version in its purest form: just the rolling rollers, with no cutting attachment. It does exactly one thing – pasta sheets – and it does it well.
That may not sound like much, but sheets are where everything begins. Lasagne, ravioli, tortellini, cannelloni, farfalle and hand-cut pappardelle all start from an even, thin sheet. The dial lets you choose between ten settings, from 4.8 mm for working the dough to 0.6 mm for a sheet so thin you can almost see through it. The rollers are 150 mm wide and made of anodised aluminium, which gives the pasta a slightly rough surface that sauce clings to better.
If you want to make fettuccine, spaghetti or tagliolini later, there are cutting attachments in Marcato's Plus range that can be bought separately and clipped onto the machine. With the Pastadrive motor, also sold separately, you won't need to crank. So this machine suits both those who want to start simple and those who already have their favourite attachments and just need the roller itself.
