You are welcome on a pasta course where you will learn the genuine way to knead a really good pasta dough, roll completely by hand with an Italian rolling pin (Mattarello), and then make both filled and unfilled pasta. You will make Tortelloni, Fagottini, or Ravioli as well as Tagliatelle, Pappardelle, Farfalle, Sorpressini, Garganelli. The last mentioned are "naked" pasta varieties. Do you want to learn how to make pasta from a genuine Sfoglina? What is unique about the Pasta Handcraft is that you get to learn how to roll pasta by hand. No machines are used. You use a so-called Mattarello – an Italian long rolling pin, which is used for this very purpose. It is both easy and difficult. The easy thing is that you will learn to roll by hand quite quickly, and be able to continue it at home. The hard part is that there are several techniques for it.
