Around four thousand entries, continuously in print since the thirties, which alone is an argument few cookbooks can make. This edition had Joël Robuchon chairing the editorial committee. The recipes in it are too sparse to actually cook from, and that doesn't matter, because you don't buy Gastronomique to cook, you buy it to look things up and to have it sitting there. Both perfectly legitimate reasons.
