David Chang opened a noodle bar in the East Village in 2004 and within five years had torn down the wall between fine dining and everyday food, something few have managed without asking permission first. Momofuku is the document of that period, with ramen, bao, pickles and a tone no cookbook author before him had allowed himself. The recipes are demanding, and the book doesn't spend a single line apologising for it. It's written together with Peter Meehan, which shows in that the text reads perfectly well cover to cover without you cooking a single thing.
