    • Lyo Chef is a compact and flexible freeze-drying system for both home and small business use.

      The models are made to freeze-dry small batches of products, be it fruit, vegetables, mushrooms, fish, flowers or leaves. With their compact design and powerful features, it now becomes accessible, quick and easy to create incredible products that are otherwise hard to come by or simply not even available for purchase.

      How to use Lyo Chef:
      Pre-cool the chamber according to the program. Put the fresh food on the trays. For best results, use some type of nonstick paper, preferably those made specifically for this purpose. When the chamber has pre-cooled, the display will ask you to insert the trays. Close the door firmly. The first phase is to freeze the chamber and the food. Its powerful blast chiller pump will lower the chamber to -50°C, when the special high vacuum pump starts. You will be able to see times, temperatures and process status on the LCD screen throughout the program.
      Now the actual freeze-drying begins. The trays will start to temper and lower the temperature a few degrees, generating enough evaporation to dry out the product properly. The steam released will be trapped on the walls of the main chamber. This process is repeated throughout the proram and speeds up the sublimation process.
      When the program is finished, drain the liquid with the tap at the back. Open and remove the food, which is best stored in vacuum-tight jars or a dry cabinet until use. These products can be stored for years if preserved from moisture, for example using Silicabags.
      To clean, set the defrost mode and open the valve. The ice layer that has formed around the chamber will thaw completely, and after a thorough cleaning you can start a new freeze-drying process.
      After every third cycle, the oil must be drained from the vacuum pump and filtered to get rid of any water and sediment. Once the oil has been filtered in the jug, you add it to the machine again. Extra filters, new oil and all that stuff is of course extra if needed.

      Good to have/Good to know:: The non-stick sheets for the trays are resistant with non-stick properties on both sides. They prevent the transfer of flavors from one raw material to the other via the tray preparation but above all prevent the products from sticking. They are completely smooth and leave no marks on the product.
      Spare oil for Lyo Chef is available for purchase. To maintain the freeze dryer at its best, the oil in the pump needs to be replaced and cleaned regularly. This will extend its lifespan. You can filter the oil with the jug provided, but one day you may need a new one.
      Oil filters are also available. The filter that sits in the jug and filters the oil can do so effectively up to 20 times. After that it is time to replace the filter.
