Kudamono is Japanese for fruit, and the knife type is a Japanese variant of the paring knife with a gently curved blade designed for peeling and precision trimming directly in the hand. The curved blade profile creates a more natural movement against round fruits and root vegetables compared to a straight blade, and the short format gives control that is difficult to achieve with a longer knife for work in the hand rather than against a board.
Veark's KDM08 is the smallest knife in the brand's range and the most specialised. Solingen-forged in a single piece of steel, open oval handle, the same design identity as the entire collection in the shortest format. It suits kitchens that cook with a lot of fresh produce and prefer a well-defined tool for each task rather than forcing a knife to do something it was not shaped for. Blade length 8 cm. Full steel construction, a heavy and robust knife with an industrial workhorse feel. Stainless steel X50CRMoV15, 58 HRC. Made in Solingen, Germany.
