About Isomalt. Isomalt is a type of sugar alcohol extracted from sugar. It is odourless and easily soluble and is mainly used to sweeten dishes. Isomalt is not absorbed by the body in the same way as regular sugar, which makes it diabetes-friendly with only two calories per gram. It is less sweet than sugar - about 60% as sweet - but does not compromise the natural taste of sugar. It is odourless and very soluble. The solubility of Isomalt is 24 g in 100 g and it increases at higher temperatures. A big advantage is that it does not absorb moisture in normal indoor conditions. It is something that makes it last a very long time. It has a high heat resistance and does not melt until it reaches 145°C, and its chemical structure does not change at normal cooking temperatures. Use Boil 2 parts Isomalt with 1 part water to 165°C. Content: 100% Isomalt Store dry, cool and dark. Lasts for about two years.
