Sharpening knives at home with good results has never been so easy as with Horl! No more anxiety and worries about poorly maintained knives, there is nothing to blame anymore. Horl makes knife sharpening a breeze and anyone who ever handles a knife in the kitchen much happier!
Horl knife sharpeners have long been a favorite of ours at the Kitchen Lab, both with customers and staff. Thanks to a magnetic backing, you have a constant sharpening angle on the knife's edge as you smoothly and precisely, but effortlessly, sharpen a knife using the roll of sharpening wheels. Now they have released their long-awaited generation 3!
Just like its predecessors, the method is that you attach a knife with the edge facing up to one side of the magnetic holder. The holder has two sides with different angles, one at 20° which matches the sharpening angle of traditional European knives, and one at 15° which is standard on Japanese knives. Thanks to the magnetic support, the angle is fixed and constant throughout the sharpening process, so you don't have to visualize three twenty-five rings stacked on top of each other to maintain an even angle against a grinding stone. Simply bring the roller to the edge of the knife and roll back and forth to methodically and carefully bring back the sharpness of your cooking.
On the roller itself, there are two sides to choose from. One side has a diamond grinding wheel that is efficient at grinding and is used for a coarser grind or to produce a rough edge. Compare this to a coarse grinding stone (or coarse sandpaper if you don't have a knife sharpening background, but are a devoted dyi-person). This side is suitable for use when the knife really needs sharpening.
The other side has a ceramic whetstone. It is used to finish sharpening and polish the edge after the rough treatment with the diamond wheel. Compare with a finer grinding stone (or finer sandpaper). This side can be used without first giving the diamond treatment and is a good way to maintain your knife. Use the fine side monthly, weekly or daily to keep your knife in tip-top shape! A very lame, but telling comparison could be that the fine side is to shower your hair while the coarse side is to go to the hairdresser.
For those who wish, there are also opportunities to dive even deeper and use different types of grinding stones and coarseness to really get a perfect edge on the knife. Changing the grinding stone was also possible on the Horl 2, but with the Horl 3 it is now easier than ever. With the new Quick-lock system, you can easily put on and take off different sharpening wheels, making it incredibly easy to immerse yourself in sharpening your knife to perfection. These new Quick-lock sharpening wheels are suitable for Horl 3 and Horl 3 Pro and are not compatible with previous generations or Horl 3 Cruise. Horl 2 sharpening wheels will not work with Horl 3 either.
In the package there is a magnetic support with two angles and a roll of diamond and ceramic abrasives. Additional grinding wheels are purchased separately. Horl 3 is available in two designs, made of beech wood or walnut wood. Further variants of the Horl 3 include the Horl 3 Cruise and Horl 3 Pro which both have different specifications.
