Filipino cuisine is incredibly diverse and exciting, with strong local traditions and tropical ingredients meeting influences from around the world. The island's colorful history, combined with its geographical location, has created something truly unique. The result is sweet, salty, sour and spicy - simply irresistible. It could be an iconic adobo, dark, simmering and glossy, with the acid and umami turned up to the max, or a halo-halo, the crazy and super-sweet peacock of desserts that is honestly unlike anything else.
We could say that this is our tribute to Filipino food, but that wouldn't be the whole truth. This is really a tribute to our mothers, those who left their homeland for love and for Sweden. And perhaps a greeting to our younger selves, the brown-eyed boys who grew up here, but who didn't look like everyone else.
Joel Åhlin has, in addition to international culinary experience, been active in Stockholm for almost 20 years as, among other things, chef at Tjoget and co-founder of Agrikultur and Bar Agrikultur - with a star and Bib Gourmand in the Guide Michelin.
Lennart Weibull is one of Sweden's best food photographers and has made several cookbooks in Sweden - but also internationally for, for example, Martha Stewart and Bon Appétit in the USA.
