The Japanese kiritsuke knife is a hybrid between a vegetable knife and a fish knife. Traditionally, the knife is used by the chef as a sign of status, as it is considered difficult to master. Once you become proficient with the knife, it is said that it can be used for anything.
Super Gou is a knife series with an impressive 161 layers of steel. The core is made of the Japanese SG2 Micro Carbide powder steel and is surrounded by 160 layers of softer steel. The powder steel contains a high percentage of carbon and is used because it is clean and strong, which in turn allows the edge to be sharpened to a razor-sharp edge.
The blade has a fascinating Damascus design that signals the knife is of the highest quality. The red-black handle is made of durable Canvas-Mikarta.
