About Gellan Gum Type F (E418)
Type F is the more popular of our two gellan gums. It is a multifunctional gelling agent that produces solid gels with perfect visual clarity. It can also be used in smaller doses to make liquid jellies, pastes or to clarify liquids. Gellan gum is a good alternative to Agar Agar, or as a vegetarian alternative to gelatine. The advantages of Gellan gum compared to Agar Agar are that it gives a better gel strength and is able to heat jellies up to 120 degrees without melting.
The powder is soluble in liquids with between 3.5 to 8 in pH value, which means that the gum has a wide range of uses
Use
Dissolve the powder in water and heat until it is 100 degrees - the gel settles when the mixture cools. Once the mixture has set, it can be heated again without losing its consistency.
For a thickening liquid - use 0.1% - 0.5% by weight
For a soft jelly - use 1% - 1.5% by weight
For a solid jelly - use 1.5% - 2% by weight
