    • About Gellan gum LT100 (E418)

      Gellan gum LT100 is used to make firm, soft and flexible gels. The gum is soluble in liquids ranging from pH 3.5 to 8, giving it a wide range of uses. Use it to make soft mousses, jellies and marshmallows. If a preparation with this is reheated, it will melt.
      Use

      Dissolve it in boiling liquid and it will thicken as it cools. The powder is strong and normally no more than 0.5 to 2 percent per kilogram of liquid is needed. Mixed with Gellan gum type F it gives a softer texture
