    • Anyone who has ever worked with a carbon steel pan probably knows how wonderful they are. At KitchenLab, we're hardly new to the subject either, and for us, a carbon steel pan, along with a sous vide circulator and a siphon, are the most basic elements of the kitchen and almost part of the work uniform. With great enthusiasm, we are now strengthening our range with Swedish-made carbon steel pans from Kockums Jernverk. The frying pan is made in Anderstorp from SSAB carbon steel. The material is 3 mm thick, blasted and burned in with Swedish vegetable oil at the factory.

      Usually, you need to burn in your carbon steel pan yourself, but Kockums Jernverk saves you the agony of fiddling with the oil rag at the stove, getting an uneven burn, starting over, filling the stairwell with smoke and being in a generally confused state. The insert gives you very good frying properties and an even and fine nonstick effect with nothing more than a completely natural coating. So, with a carbon steel pan, you get the even heat distribution and feel of a cast iron pan, despite saving 20% of the weight, while getting the release properties of a coated pan without having to worry about wearing it out. However, a carbon steel pan may not be your first choice if you are mysteriously frying lemons. (You can read more about the comparison of different types of frying pans here.)

      Kockum's carbon steel pan can be used on all heat sources including induction and can be used in the oven up to 200°C. The handle is painted black with an embossed Kockum logo and has a hole for hanging.
