About Locust Bean Gum (E410)
Locust Bean Gum is a completely natural product derived from the seeds of the carob tree. It is a versatile, vegan gelling agent and is mainly used in small doses as a thickener. Use it with dairy products, in desserts, dressings or sauces.
You can also use it as a substitute for eggs and flour as they have similar binding properties. Add it to frozen products like ice cream to reduce the formation of ice crystals and improve texture. Or why not use it together with xanthan gum to make extremely elastic jellies?
The fruit kernel flour is not very sensitive to either pH or high salt levels. It works on most things between pH 2.5 and 10.
Use
Dose between 3 - 11 grams per kilo. Add the fruit kernel flour in small increments while stirring vigorously. It is soluble in cold liquids, but works best if the liquid is above 60°C.
