Eleven Madison Park sits beside Madison Square Park in Manhattan. Daniel Humm and Will Guidara took over the restaurant in 2011, the same year this book was published, and ran it during the period when it went from highly regarded to world-leading. Three Michelin stars in 2012 and named the best restaurant in the world in 2017.
Francesco Tonelli's photography is a substantial part of why the book has the reputation it does. It is restrained in a way that few restaurant books dare to be.
The recipes are, in practice, unusable outside a professional kitchen. Celeriac cooked in a pig's bladder has no place in an ordinary household. Its value as inspiration, on the other hand, is high.
Since then, everything has changed. Humm and Guidara parted ways in 2019, and in 2021 Humm turned the restaurant entirely plant-based, the most debated change of direction any three-star restaurant has made. The food in this book is therefore no longer served anywhere.
