Easy Binder is a naturally derived vegan binder and gelling agent specially developed for dishes such as veggie burgers, vegetable terrines, cheese and fruit dishes. With Easy Binder, it's easy to achieve the right chewiness in dishes such as black bean burgers, chickpea patties, as well as holding together hearty patties with mushrooms such as portobello, shiitake and oyster mushrooms. Serving suggestions: Vegetarian burgers and veggie patties (yields 1kg of finished product): 711g Vegetables/vegetables (pureed or chopped) 250g Cold water 25g Easy Binder 8g Salt 2g Black pepper 1g Dried onion 1g Dried garlicDo as follows: n

Dissolve the Easy Binder in cold water using a blender or hand blender.
Mix your ingredients with the Easy Binder solution for 2-5 minutes by hand, with a spatula or blender.
Then place the batter/mixture in molds or create shapes by hand and let them set in plastic wrap. For best results, air bubbles should be avoided, this can be prevented by vacuum packing the mold in a bag.
Let it set at refrigerator temperature (2-5° C) for 8-24 hours. The finished product can then be sliced, frozen, fried, grilled and/or cooked.

nVegetarian burgers can also be prepared in the form of a cylinder/roll as they can be easily sliced before frying. Ingredients: Sodium alginate (E401), Calcium sulphate (E516), Pentasodium triphosphate (E451i), Pentasodium diphosphate (E451iii).
